Take 2!!

Last night was a pizza kind of night again at my house.  Tyler was at work, I was watching Burlesque, and dinner needed to be something that was fast and easy, with minimal clean-up.  Pizza sounded perfect!

So I tried the same little mini-pizzas again, this time with a few modifications.  And the result:  WINNING!

The pizza crust was crispy with the nutty flavor of the whole wheat grains, the cheese was bubbly and aromatic, the jalapenos had the perfect amount of heat and flavor.

This time, I toasted the sandwich thins to a medium crisp before saucing them up.  I spooned out a couple tablespoons of the Prego tomato sauce from the jar and added a little chili powder and cayenne pepper, then warmed it slightly.  It added just the right amount of pizzazz and spice to a slightly sweet, if boring, sauce.  I rinsed the jalapenos in water and diced them before using them as my solo topping.

Not going to lie, I did miss the crisp crunch and indistinguishable meaty flavor of the pepperoni mixed with the spice of the jalapenos.  Anyone have any healthy pepperoni substitution suggestions?

All in all, though, my pizza craving was satisfied, dinner was quick and easy, and clean-up was a breeze!  And did I mention that these lovely little pizzas have only 203 Calories.  Yay for fitting into that itty-bitty bikini!!
